Lettuce Wraps & Thai Coleslaw

I'm so excited about this recipe! It's delicious..I love lettuce wraps
.. at PF Chang's China Bistro OR Kona Grill.. or at my girlfriend
Jordan's house :) I love them even more now that I can make them
myself and they even taste BETTER than out at a restaurant! My dear
sister Rachel introduced me to this recipe and I've now had it about 3
times in the last week and a half :) I sorta like this recipe. A LOT!

Lettuce Wraps

1 lb. ground turkey or chicken
1/2 medium onion, diced
2 large cloves of garlic
1 in. knob of fresh ginger (I use the fresh stuff in the jar)
1 Tbs sesame oil
2 1/2 Tbs soy sauce
1 Tbs peanut butter
1/2 Tbs honey (or brown sugar)
1 Tbs + 1 tsp chili garlic sauce (I'll use Siracha)
3 green onions, chopped (I forgot to buy - is more for color and cruch)
water chestnuts (optional)
zucchini, grated (optional - a good use for zucchini and a way to expand your meal further - it takes on the flavors of the dish and adds a little color)
salt and pepper

Sauté onions and garlic in skillet. Add the ground chicken or turkey and brown until fully cooked. Add the remaining ingredients (if you add zucchini - mix in with meat when cooking). Serve with outter lettuce leaves! 

serves 3-4



Thai Coleslaw 
(I made this up on the spot and just started adding ingredients, so I'll try to recall exact amounts!) 

1 cucumber, diced
1/4 head of cabbage
1/4 c. rice vinegar
1/8 c. olive oil
1/2 - 1 tsp. sugar
1/2 tsp. fresh grated ginger
1/4 tsp. sesame oil
1/8 tsp. peanut butter
1/2 tsp. sesame seeds
dash +/- red pepper flakes
salt and pepper
fresh cilantro, chopped

Combine together in bowl and serve!
