Taco Tuesday
I love traditions and Taco Tuesday is a favorite. My family in CA have
friends over every week and I was part of that when I lived out there
for a summer and want to continue it here and sometimes it's just
me... And this week it was.

I had ground chicken and seasoned it well- it had a combo of fajita
seasonings, cumin, chili powder and of course fresh garlic! It
definitely had a bite to it. I wanted to be creative with the
ingredients and I with the items I had on hand (can we say I'm
inspired by The Food Network's CHOPPED?!?!?!) and had a sweet addition
with the Jonathan Apples (from WesCo!), then a little tang with lots
of fresh Lime Juice squeezed over the top of a bit of purple cabbage.
Kidney Beans were in my pantry- I would normally prefer to use Black
Beans but those were not an option. A small salad with Avocado and
lettuce with salt and pepper and lime juice for the dressing - this
Taco Tuesday was fresh, light and VERY delicious!
